The Product Catalogue has Categories and Items that you can customise, add/or delete. The example below shows:
Category: Appliances
Items: BBQ, Cooktop, Dishwasher
On the Category, you can enable "Exclude from total:" as an option. This is often used for Authority Fees like Insurance and Long Service Leave Levy. As these items are calculated as a percentage of the Quote Price, you can exclude this items from the Total.
When the Quote is presented to the Client, the items that are "Excluded from the Total" are broken down for them:
